1Preheat grill to medium-high heat. Slice eggplant and zucchini, and brush with olive oil.
2Grill for 3-4 minutes per side, then stack eggplant and zucchini slices with mozzarella cheese and basil in between.
3Grill the assembled stack for another 5 minutes until the cheese is melted. Serve hot.
